How We Started in Leavenworth
Pat and Aree Proctor opened Baan Thai on February 1, 2006, with one goal: serve Thailand's real flavors to their Kansas neighbors, unchanged. The hand-crafted Thai roof facade — imported from Thailand — was never just decoration.
A Menu Beyond the Basics
From fiery papaya salads and fragrant curries to khao soi — a Northern Thai specialty nearly impossible to find elsewhere in Kansas — we've always gone deeper than expected. The Angry Cowboy and Baan Thai Shrimp became cult favorites because we cook them the way they're meant to be cooked.
Manhattan Welcomed Us In
In 2011, we opened in Manhattan near Kansas State University — a different city, a different crowd of students, soldiers, and families, but the same kitchen philosophy holding it all together.
Rooted in Our Communities
Aree has shared her knowledge through cooking classes at Fort Leavenworth, and during 2020 we served as a community hub — earning recognition from the CGSC Foundation, Leavenworth Main Street, and Kansas Main Street.
